Dressing:
1/2 C Extra virgin Olive Oil
2T vinegar (white wine or red wine)
2T frozen OJ or fresh orange juice
2T lemon juice
2 T sugar
1 t salt
dash of pepper
Mix and chill for a few hours before serving
Salad:
Mixture of romaine and spinach
apple pieces that have been marinated in lemon juice the fridge
oranges sectioned and halved (or clementines)
dried cranberries
honeyed pecans
(heat up a couple tablespoons of honey in a pan and then stir the pecans around being very careful they don't burn, put out on plate until dry and hard)
blue cheese crumbs or feta
Mix salad ingredients and add dressing right before serving.
Soooo delicious!

ReplyDeleteIt was very delicious! Luckily I was able to sample this salad a month or so ago and it was SO GOOD! Mmmm
ReplyDeleteI made a modified version tonight with pistachios and meyer lemons and no cranberries, pecans or romaine. Love it.
