Do You Want Fries With That?



Found the camera. Hoorah. And so now you can have a photo and a recipe for salt and vinegar oven fries.
If you like salt and vinegar chips this is right up your alley. I love the flavor combo, but I am picky about just what chips I will eat. Once you go kettle cooked it is hard to go back. But I must say I think I like these better, which is good. They are better for me too.


I made a seasoned salt with toasted and ground fennel seeds mixed in with my salt. Really great. Feel free to add any seasoning you love in addition to some salt before baking. Enjoy.


Salt and Vinegar Oven Fries

2 cups of vinegar
1 lb. of waxy potatoes (yukon gold, red, white, purple or fingerling, just not russet)
2 T. olive oil 
water
salt and pepper


Cut your potatoes into wedges, and place in a medium saucepan. Cover with vinegar and any additional water needed to cover the potatoes. Bring to a boil and simmer for 5 minutes. Turn off the heat and let the potatoes cool in the liquid while you preheat the oven to 500 degrees.


When the oven is hot, remove the potatoes, draining all the liquid. Toss them with the oil or brush on and place on a baking sheet. Season with salt and pepper or anything else you can dream up. Bake about 10 minutes until golden and crispy.

  4. Did it really just take 10 minutes of baking for you? They are still in the oven after 25. Maybe I just like more color on mine? The are awesome tasting. Thank you for the quick and easy recipe! I love vinegar and salt!

  5. I guess I should say to try them under the broiler. That should do the trick to get them crisp and speedy.

  6. My husband has always liked the salt and vinegar Lay's potatoe chips but they seem so soaked with oil for me to be healthy. I have tried your recipe but spray the potatoe wedges with PAM instead of brushing them with olive oil. They are just as good and no oil! Has anyone else tried that? Any comments? I just love this blog spot! Megan C.
