Garden Harvest Chili

1 medium sweet red pepper, chopped
1 medium onion, chopped
4 garlic cloves, mnced
2 T vegetable oil
1 T chili powder
1 t ground cumin
1 t dried oregano
2 c cubed peeled butternut squash
1 can (28 oz) diced tomatoes, undrained
2 c diced zucchini
1 can (15 oz) black beans, rinsed and drained
1 can (8 ¾ oz) whole kernel corn, drained
¼ c minced fresh parsley
In a 3-qt. saucepan, sauté red pepper, onion and garlic in oil until tender. Stir in chili powder, cumin, oregano, butternut squash and tomatoes; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until squash is almost tender. Stir in remaining ingredients; cover and simmer 10 minutes more. Yield: 7 servings (1 ¾ qts)
