Our dinner from last night.....yum!
I make a two week menu for several reasons:
1. It makes cooking dinner a breeze. I know exactly what I'm going to make each night, and if I need to swap a night, I know what I can swap it with.
2. It makes shopping easier. I can make a list of exactly what I need.
3. This is the easiest way for me to feed my family more healthy.
This is what our menu is for the next two weeks:
For the week of September 7-13
7- Grilled eggplant with sweet pepper-tomato topping, rice
8- Carmelized onion macaroni and cheese
9- Roasted apples and sweet potatoes, italian tossed salad
10- Tomato-spinach penne
11- Veggie kabobs, corn on the cob, seasoned rice, smores
12- Three tomato salad, homemade rolls
13- Spinach lasagna, brownies
For the week of September 14-20
14- Green bean, grape, and pasta toss
15- Make your own pizza (sometimes we do this once a week....it's so fun!)
16- Roasted vegetables and brown rice
17- Meatless taco salad
18- Sugared pita chips with grape mint salsa, citrus-avocado salad with tex-mex vinaigrette, baked pears with oatmeal streusel topping
19- Creamy potato soup, rolls or bread
20- Roasted stuffed tomatoes

Do we get to view any of the recipes? These sound fantastic.
ReplyDeleteoh.my .goodness. I am coming over every night! Everything sounds fabulous. really. It would be really hard to post all of your recipes but maybe you can post a few throughout the weeks of your favorites that you would want to make again or would recommend. Just looking at the menu gives people hope and ideas for eating this way. Way to go Caitlin!
ReplyDeleteI think on my non-menu weeks I'll post my favorite recipe along with my health tip. Planning menus is such a chore, but it's definately worth it.
ReplyDeleteI also need to add that I love that you include desserts. We can become overzelous and try to take the joy out of eating.
